I think that is managed in your bbpress settings, not the theme.

Chris, I did all the official steps, but NO reaction. So, I think the loop-forums.php and loop-single-forum.php are overwritten somewhere. But where?

Hi,
Yes, some of the bbpress forum templates are customized by the theme. You need to tweak into this forum template file: http://screencast.com/t/CAlYWWFCvBpB
Removing the highlighted code will remove the freshness columns, like this: http://screencast.com/t/HR5w6JuL92T
