I’ve set the toggle to off in the theme panel setting (post and custom post types) which should hide the author at the top (and in other modules) but it has no effect.

Hello,
You have a single post template. For this, you can remove the author name section from the Template, edit with tagDiv Composer => https://www.screencast.com/t/4VoyAOlzgd6, select the element Single Post Comments, right-click, delete or select the element, and drag and drop it into the deleting red zone at the bottom right of the page.
The same steps for all elements.
