In the properties for the Single Image element there’s a “Add Caption” checkbox. If I check it, where do I write in the caption I want displayed?

You can add the cation in the WP media library section here: http://screencast.com/t/h9TRDHfP Then select an image and type in a caption for it in the caption field: http://screencast.com/t/FBauxbnqpT
