How can I make this theme stop generating tons of unnecessary pages that are not usable or applicable anywhere on the site?
Also, some of it is appearing on the search console and generating a lot of errors there.

I see that is the blog page. You can delete it, create and customize a cloud template designed like that. If you use cloud templates, then I recommend that you use cloud templates for all your pages.
