Is there any way to configure the excerpt to be the subtitile of the post in any other way than doing it manually on every post?

I think that you are referring to this one https://i.imgur.com/D0jRpRj.png our theme does not has an option to display the subtitle on blocks, this can be done with some custom changes or a better approach is to use the custom label and set the same text like the one from the subtitle -> https://i.imgur.com/mDEjkDe.png the results will be -> https://i.imgur.com/pYBWKri.jpg (you can style the layout).
