Understanding the main menu

I am trying to find out how the menu works. I’m wanting to retain the preview for articles but I want to completely change the menu on all pages. What exactly do I need to do in order to make this work? Is there an article to read or a simple explanation?

I have noticed that all of the icons are missing even though they appear in the navigation label.
