I imported the animal theme, replaced all the content, removed all the things I don’t need, but no matter what I do the CSS for the h1 Post titles and Category titles are linked to the demo files and I cannot edit any font settings within the Theme Panel settings.

How can I change this? How do I unlink from the demo?
If I uninstall the demo, will I loose all my settings/data/set up?

Thank you for your interest in our theme. You will have two possibilities to use our available demos ->with content and without content. I suppose that you choose the first one, with content, right? If you will use this and if you will edit all the content with yours, when you disable the demo you will loose all your data.
It is best to create from scratch all of your posts and pages because all of these will be loaded in the database and when you change the demo, you will not loose your data. Please provide more details about what do your mean through unlink from the demo? Regarding on font settings, you can change it only from Theme panel, Font Settings section.
