Hi, I’m working with version 11.5.1. I checked for updates (changelog) and I decided that the new features weren’t important to us.
Now will we be able to safely do a subsequent update, skipping the neglected ones and going directly to the last one, or could problems occur?

Depends, sometimes, the problem can arise when you update from the previous version to the last, but you can try to do the update on the staging.
