Hi, I use a plugin for creating “WebP” versions of uploaded images.
Some photos are not converted to this format, I noticed that this only happens with the crop of the photos set in Newspaper theme.
How can I solve?

Correction: only for posts imported with WP All Import, and with crops of your theme.
On the other hand, if I use WP All import I have no problem with WordPress default crops

Please make sure your images are uploaded in their full size and set it as full size also as you can see here: https://www.screencast.com/t/Oxue274e
You can use that plugin also/which one is suitable for your needs, but please take care for a future plugin conflict.

the crop of the featured image of the posts is set in the post layout.
I don’t see the setting to choose the crop of the image, and I don’t want to set the crop for each published image (about 100 posts are published a day on my site, by at least 10 users).

If you referring to optimizing the images, you can use EWWW Image Optimizer Plugin and activate the lazyload option, and then you will have webp images -> https://www.youtube.com/watch?v=bR5ZY1fpeC4 you can use https://i.imgur.com/oiKd10u.png without Easy IO.
