Where to find the post template file that I need to modify something on. I would like to add custom text before or after “page count”

Where is this “page count” exactly? I will try to help you. If you use the predefined post templates the template files are in the main theme folder

The location is shown as below

So you mean the view count. That is in the template here (example for post template 1)

Adding something before or after that code should display it in the posts that use that post template.
