Why articles from categories “métiers pour extravertis” and “métiers pour introvertis” are listed in category “métiers d’avenir” ? I don’t want that.
I don’t understand because these articles are not placed in this category.. Only in sub categories.

In our theme it’s function like that: one category will display also the posts from its sub categories.
If you want to customize it how you want then this will require custom work which is not covered by the support team because there is no setting to achieve that.
