WP Writing Settings (via email): Creating a new post on the go (on an iPhone)

As far as I am aware (I have yet to use this feature), I know that it’s possible to send an email using WordPress Settings > Writing Settings… and I also understand that I can only select one category, but is there a way to override this because I will be using different templates and wish to choose the correct one.

Also, what about images? Will they get placed onto the post or ignored? Or should I not be emailing images when creating a post?

I know that this part of WP is not something you can control.
