Let me simplify this.

AMP has first priority in the Google search so the organic visitors coming from search results and Google+ will see AMP pages of your site.

Direct visits, visits from the Facebook & other social networks will see the non-AMP version by default. So it’s better to have both (my personal opinion).

Hope this information will help you to choose the right option for your site.

Yes, you can use both AMP and mobile plugin at the same time.
It will not cause a duplicate issue as AMP has its own permalink.
