You can delete the demo data from your site, just delete the demo posts from Posts, delete the menu from Appearance -> Menus and also the homepage from Pages. All this not depend of which theme you have activated.

The auto thumbnail just get the thumb video image and add it as featured image on the post. Also you can add it manually if you have the image from another video hosters.
