The “screen options” within the Posts section doesn’t have the option to display the featured image/thumbnail for any of the listed posts.
Is there a simple way to display the featured image next to each post in it’s own dedicated column?

Sorry, I was referring to the WordPress admin control panel / back-end.. Hope that clarifies it.
I’m not sure i understand this properly. You want to show the featured image in the wordpress admin section? Where do you want to show it?
On the admin side, within the control panel… The “screen options” within the Posts section doesn’t have the option to display the featured image/thumbnail assigned for any of the listed posts.
It would be extremely useful to have that displayed on the admin side next to each post/draft/etc.

The screen option has a featured image and featured video toggle like so: https://www.screencast.com/t/UZ4k6ThcUKb If this option does not show up for you, please disable all plugins except the page builder, clear cache and reset cdn files if you use it. Please also check any custom code you might have added to the theme panel or the theme files. If you use a child theme, please switch to the main theme to make sure it does not affect the proper functionality of the theme.
