The child theme is not related to the demos. It can be installed and used when you think it is necessary to use one. It is provided in the main theme package

So use one only if you plan to make consistent modifications of the theme. Other than that you can use the custom code sections in the theme panel for minor customization.
Installing a demo will import the demo content, theme panel settings and custom demo design.

You can install the demo you like, then gradually replace the content with your own. Start from the top for example, upload your own logo, set your own menu

Edit the homepage with the tagDiv composer, remove/modify/add elements as you want
