I can see “Please note that the Disable Ad options can be enabled only for non-adsense ads.” (on/off switches) written. Does it means that we can’t use it because it’s against google adsense policy or does that functionality will not work with adsense ads code.

In the theme panel, those options refer to disabling the image ads from displaying on specific devices (https://i.imgur.com/tDcrsfC.png). This is for the Adsense ads, to set a size (https://i.imgur.com/uBOz7Xq.png), but the options to not show on a specific viewport do not apply.
But I recommend using a cloud template instead of the standard templates for posts, categories, etc.

I think it need an update. I see many outdated docs.

Yes, we will update the documentation. Please note that options are used for standard templates that come from the tagDiv Standard pack plugin, which is deprecated; for cloud templates, you can use ad box and single post templates.
