You can upload it as a logo on header styles 9, 10 or 11 which will show the logo full width like this example: https://demo.tagdiv.com/newspaper_cars/
The big car banner is the site logo.
If you want o have a banner as well as a logo besides the menu, then you need custom modification to implement the banner.

Any size can be used. The website you mention uses a video on a loop in the header

That will work in the theme ad spots, not as a logo.
The height will depend on the image you use as logo, it will adapt to it. The header could be modified with some CSS if required.
