If you refer at the text logo, seems to me that the logo looks fine on mobiles screens also: http://screencast.com/t/qeXP1153mFFm
Please provide more details about this, a screenshot would also help.
Regarding the category issue please note that the menu from mobile contains the same content as the one from desktops just another design so what configuration you have fro the main menu the same will appears for mobile menus also.

Not sure how you would one this but if you would want them inside the posts’s content then I’m afraid that in that case you would need custom modification to the get_content() function and should get someone to do it for you if you don;t know how to do it.
