How can I add, delete or change the name of the sidebar templates in the widgets area? (td_demo_sidebar_fashion, td_demo_sidebar_fashion etc.)

Hello,
Unfortunately there is no rename option. You can only create or delete a sidebar but you cannot rename them. Sorry for the inconvenience.

how do I create new custom sidebars and delete existing once like td_demo_sidebar_fashion ?
