This might be a silly questions but how do I create more widgets? I’m wanting to customise several categories to show sub-categories in the sidebar.

Actually I already saw that. It shows you how to create a new sidebar. What I’m asking is how do you create the widget that you put into the sidebar. I want to insert a sub-category into the sidebar widget.

Unfortunately you cannot create widgets so easy. There are widgets that come form the the, widgets that come from wp and widgets that come from plugins. I’m not sure how you want to add the sub-category. As a menu item in your sidebar? in which case you can use the wp custom menu widget and add a custom menu to your sidebar.
Or if you want to add content blocks to your sidebar and filter them by a category, then you can use blocks to display post from that particular sub-category.
