We are launching Shop on our website. I designed custom shop page with tagdiv composer but when I assigned it in woocommerce, as default shop page, it removes everything I designed and leaves the default page with couple of products, that looks horrible. Is there a way to keep my design and assigned new page as a main shop page?
Also is there a way to design custom category pages for products, ‘cos the ones that are the default are looking the same as default shop page.
The shop is not live on the website it’s still in the development.

You can use column text elements in your custom page and insert there the woocommerce shortcodes: https://docs.woocommerce.com/document/woocommerce-shortcodes/
You will have to rename your page because setting up your page directly will overwrite the page you created.

I already did that and now I have two Shop pages, Custom build for desktop and default one for mobile, ‘cos the one I build in tdcomposer is not visible on mobile/amp pages for some reason.
How to change thumb size for woocommerce ‘cos product thumbs are not sharp, woocommerce Display feature is in the Customizer > WooCommerce > Products on other themes and Newspaper don’t have standard Customizer? I tried with Theme panel > Thumbs on modules/blocks and there is no woocommerce option there.

The designs do not match because you are using the mobile theme. The Mobile theme was specially designed for optimization on mobile devices. Unfortunately on mobile theme you cannot do much changes of design. If you want to have the same design as on desktop mode you can achieve that by simply disabling the mobile theme.
You will have to recreate your pages into the Mobile editor.
Also you can disable mobile theme on certain pages or posts by following this setting:
