I am wanting to have a specific sidebar displayed for posts containing specific categories.
For example, on any posts with the category “blog” I’d like to show a specific sidebar.
For any posts with the category “Videos” I’d like to display a different, specific sidebar.
Is there a way to achieve this so that i don’t have to go back through thousands of posts and manually set the sidebar from the admin area?

You can achieve as you want only from Theme panel. First of all, you have to set your custom sidebar for each category like this -> http://screencast.com/t/25L8Ec9ITZPB and then you have to check all your posts to have default sidebar set it, like this -> http://screencast.com/t/YaOYijQD4 and then for each post from category X you have the custom sidebar that you set for this category from Theme panel.
