is there a way to delete a mobile template from a page once it has been assigned so that there is no template at all?

Hi,
If you are referring to the mobile theme plugin, then just disable it and this will be removed -> https://i.imgur.com/6RPZBm0.png in case that you are referring to a mobile page made with tagDiv Composer, then you need to set first on no mobile page https://i.imgur.com/d8A3G0b.png or no mobile template https://i.imgur.com/aUKt1xg.png and that will no longer apply on that category or single post template.
