Firstly, is there a way to remove the taxonomy from category pages?
Another question I have is there a way to add actual content each of to the category pages?

Unfortunately, the theme does not have any such an option for this, sorry! You should check the theme core files if you want more additional customizations because we cannot provide something like this at the moment, sorry!
