How to Change the page/post templates?

Is there a way to change the predefined post/page templates. For example: I would like to use a seperate post template for each category. So it would be nice if I can make my own predefined templates.

Hi,

Those are page templates, they can only be selected and used for pages. Each page you create can have a different template, depending on your needs.
Category pages at the moment can only be customized through the theme panel settings
