I am utilizing the “mobile version only” for rendering on mobile devices (not “AMP” or “AMP + Mobile”). The pages that are created in the “pages” tab in wordpress are the same across all platforms, which is what I’m going for. However, the Cloud Template pages I created are using the AMP simplified website template instead of rendering the responsive design on mobile. Any ideas on how to get rid of the simplified mobile template for the templates? The Cloud Templates that are rendering incorrectly are the “single post template 46” and “category template 39”.

Hello !
The Mobile theme was specially designed for optimization on mobile devices. Unfortunately on mobile theme you cannot do much changes of design. If you want to have the same design as on desktop mode you can achieve that by simply disabling the mobile theme.
You will have to recreate your pages into the Mobile editor or completely disable the mobile theme. The mobile editor will not render shortcodes !
Also you can disable mobile theme on certain pages or posts by following this setting:
