My mobile version of the site is not showing anything other than Latest Articles but I do not have this set to only show a reader. When I review the site on a desktop and resize to mobile version it is displaying exactly as I wish it too, but on a real mobile it is showing a reader layout with no homepage content. How can it format for mobile on screen but not on a real phone.
Please review the site on laptop and mobile to see the issue (reduce screen width to mobile version on a desktop and you see the page as it is supposed to look on mobile then try it on a mobile and you get a poorer result.

The Mobile theme was specially designed for optimization on mobile devices. Unfortunately on mobile theme you cannot do much changes of design. If you want to have the same design as on desktop mode you can achieve that by simply disabling the mobile theme.
You will have to recreate your pages into the Mobile editor or completely disable the mobile theme. The mobile editor will not render shortcodes !
Also you can disable mobile theme on certain pages or posts by following this setting:

I am happy with the mobile version if it actually worked on mobile can you have a look at the site and then on a mobile and you will see where the issue is. I explained this in my first comment.
AGAIN: If you view the SITE on desktop, then reduce the Screen size in your browser you see the site as we want it to be seen on mobile!!!!!!
BUT: if you go on a MOBILE PHONE and check the site, then you do not get the same experience.

Can you try the site on an actual mobile phone and you will see that it does not show like that.
The visual you showed me would be perfect but it is not how the site is displaying on actual mobile phones.
Again I have made this clear twice already.
If you reduce the desktop screen size then you see the site perfectly for mobile BUT IF YOU ACTUALLY VIEW IT ON A REAL PHONE, it does not display correctly.

Using the mobile theme plugin, you’ll gain a better speed then responsive version of theme, but in order to achieve that speed you’ll need to create a new content for pages because in the most of cases those were made with builders or shortcodes ( tagDiv Composer, WPBakery ) and you need to use only the mobile editor ( you need to set the content for pages in mobile editor -> https://i.imgur.com/ho41rUl.png and this content will be display on mobile theme, also the mobile theme will not display any sidebar)

Mobile -> the mobile theme will apply only on mobile version.
Mobile + amp -> it will apply on both and it will have the same layout.
Amp -> the mobile theme plugin layout will be use only for amp version.
