When I want to display the same content on mobile and on desktop I do not need these, says your documentation. What is your advice, should I uninstall these plugins or is there another (better) way to do this?

Using our theme you can choose from 3 mobile versions

When you install the Mobile Theme plugin, your pages will be overwritten by the plugin (the mobile theme comes with its own templates for page, post, category, etc so your current templates from the desktop theme will get converted to the mobile theme layout, the page content is made without builders in mobile editor => https://www.screencast.com/t/xbgZG8kH also, the options that are provided to edit the mobile theme version are limited (this keeps the things simple)).
So, the mobile responsive is what you see then that you select the viewport on phone => https://www.screencast.com/t/matV17hH, so some settings may apply for each viewport(where is the border blue), and others are not(where the border is black).
The mobile page has the mobile templates from Cloud Library => https://www.screencast.com/t/YCcZ8rL8
Mobile responsive version of the theme and the mobile page editor can be edit with tagDiv Composer, the mobile theme plugin not.

So, if you don’t want to use the mobile theme or AMP plugin you can deinstall the plugins.

is there a way to see forecast how would be a cloud library theme without making it operational on the site?
I would like to get an idea before choosing it…
My theme is London Pro, can I test every mobile cloud or choice is only for London Pro mobile?
And last: for a faster loading, you would suggest cloud mobile better of plugin mobile?

You can make tests with the cloud library on a staging website and after all, you can choose what template do you want to use.

can I do a test in a domain http://www.testsite.it with same license,
or is possible to do another download that works few days?

You can use a license key for one single product, but the same purchase key can be used to activate your development copies and also the live version of your theme. Using test platforms is allowed with the same Envato key.
