In my theme I am using WP User Frontend plugin, and whenever that plugin is enabled my post settings disappear.

Please take a look in posts / post screen option from the right corner, maybe the plugin set of the post settings from there.

I am trying to add custom single post template, how can I add it to one of the defined styles, it’s not showing up for me to choose from?

Lets try together, first please go in cloud template , click on add new, select single and lets take the simple post template 14 ( https://www.screencast.com/t/12OAsdK2 https://www.screencast.com/t/F35vn5JIXR https://www.screencast.com/t/b1Eb42yAjX ), after you have finish with editing and save the change, you will find in posts the template to set for individual template ( https://www.screencast.com/t/yPhjpU8svxaV ) or in newspaper>theme panel>post settings > default post template for global post( individual post override the global post https://www.screencast.com/t/gFQ9NzTcl ), if you wish to edit the template you’ll find it in cloud template ( https://www.screencast.com/t/rgg0dXaE ).
