I installed a demo and develop my website based on that, I read this in the documentation:
If you decide to change the demo or uninstall it, the import system will make sure that you website is clean: no additional sidebars, menus or content. It will leave you website just like it was before you installed the demo.
My question is: Now that I want to delete all the content, categories, menus, etc that came with that demo, if I uninstall the demo all my customization are lost?

If you edited the demo content then if you uninstall the demo, it will also remove the files associated with it. You can create a back-up however. Duplicate the content in another post/page with a different name. (make sure you copy the content in text mode and paste it in text mode as well http://screencast.com/t/01fF6EUOjy8A)

In my case post and page content is not important. I mean like all the customizations included in the demo that I want to keep (like theme settings). Will all those be kept if I export theme settings, uninstall demo and then import theme settings?
Hi,
The theme settings will be kept. They will not be removed by uninstalling the demo. You can try to export the settings just to be safe, but the demos do not affect any setting from the theme panel.
