When I go to footer info content and change or delete footer info text, my new text or delete doesn’t appear. The former text still remain, even when I delete all cache. Why ?

If I’m right this is because you are using a footer page, so you’ll need to edit that footer page, not the content from theme panel footer, because this will apply only on footer styles.
