I want to add a Woocommerce plugin but what happens is once I activate the plugin:
All the images disappear from the website leaving a grey placeholder area where the images once were.
I did the troubleshooting instructions from the plugin under (PLUG IN AND THEME CONFLICTS)
but to no avail.

The theme is compatible with the Woocommerce plugin, there should be no problem using it properly. There are many users that are currently using the plugin in combination with the theme.
Try deactivating all other plugins except theme plugins and Woocommerce, clear all caching after doing it. Check if the images display properly.

I did the steps you described multiple times. I also uninstalled WOO reinstalled as well. I continue having the same issue.
That is unusual, I have tested with the latest version of the theme and Woocommerce plugin, there are no issues of this kind.
You could try a theme re-install by FTP

Leave all non-theme plugins deactivated, use only theme plugins and woocommerce. Check the theme system status

Ask your hosting provider to increase the allocated resources according to the guide, if needed.
Also check the PHP version you are using, the theme is tested with versions up to 7.1 others may cause issues.
