Because the function from there will return the buffy value, not do an echo. We want to change this in the future updates to make the theme more easily to be modified.

you can use whatever name you want to name the buffer, basically in that variable (AKA $buffy) we store a big change of the page and at the and we write it all in one peace.
this is for optimization purposes.
