The block title can be changed via such a custom CSS code. Try the code below and place it in Theme panel -> Custom CSS area.

That would only be possible with custom CSS code, by default the theme does not have a general setting for this. That is how these demos were created for example

On pages you can set background as you wish for most elements, using the tagDiv composer. But on posts this could only be done with CSS code. If you could provide some details about what exactly you want to color, what sections should be affected and how, I will try to give you a solution.

From what I can see at the moment, the mobile front page is displayed on desktop at the moment

That could be caused and it is in general, by caching implementations. The mobile theme is sensitive when it comes to caching. It is only tested and works best with the WP super cache plugin. You could either disable the mobile plugin or try using different caching if possible the recommended plugin for best results.

I will try to help you further with your questions after the mobile issue is solved, so the homepage can be seen.

All the sorting options are dynamic and will continually change the content displayed in the element. For example a latest sort will always display your latest published posts. The theme does not work with the sticky post option in WordPress, it will not be taken into account.

All these parameters are defined in the theme config file, for example the custom title you set for a block

The theme and the composer do not yet have such an option, they might have in the future, I cannot say exactly.

So the navigation label is the actual menu item name, while the title is present as a link parameter. There would be no possibility of changing this functionality unfortunately.
