That demo uses post template 8 I believe, that style displays the featured image as background, it is part of the design. The featured image cannot be disabled for that style because it will be broken.
You could use a different post template, these are the default ones

You can preview and even edit them. With the cloud library plugin you can import and use them

Yes it is, when using the respective post template or category templates which have the same design, the featured image will automatically be set as background.
You could use this ready made functionality and design if you want, shouldn’t be any problems. Let me know if there are.

This background feature image will work automatically when it is supposed to, making it to work in other cases most likely will require to make modifications to it, or it may not be possible entirely.
