How to create a gallery

How would one create a gallery with this theme? To embed in a post, or upload as its own post?

I don’t see this option under media.

I have another quick question. Do you know how I would go about setting an image that would appear as my thumbnail when I share the site URL on social?

I have set my site logo and favicon, but right now when I share on social, the thumbnail appears blank.
