The menu is limited to max 30 items, how can I increase that amount?

You can add them in the menu from Dashboard -> Appearance -> Menus. You can drop them in More, and they should display: https://app.screencast.com/s6aRXyXWlkDD7

I guess I wasn’t clear. As you can check on the website underneath, if you hover over Europa you get the Mega Menu, but at the left hand it stops after Turkije while there are more countries after that.

Ok. Click on the header main menu, open the mega menu tab, and there is a setting called “Subcategories limit”. Try to change that and see the results.

No. Unfortunately, this setting is available only in the tagdiv composer using a cloud header template. Otherwise, there is no setting if you use default header template.
