I am sorry, but I am totally lost with how to adjust my Crafts theme to my needs.
I can find all these layout options but I have NO idea where to edit the text or menu details.
Can I hire somehow to walk me through my questions?
And no, your forum is not helping me at all… ;(
And where can I see which size the images need?

The menu can be edited as usual, in Appearance->Menus

There you can create new menus and manage their locations as well.
Each module requires a particular thumbnail size. The thumbnail sizes must be enabled in the theme panel

Where can I change the icons of the menu? Is there a pool of different designs where I can chose designs?
And is there a chance to change the color of the menu background in Craft theme or are those images?

on my current layout the top half of the theme is editable but the lower part I cannot change in the composer. the different blocks and colums dcannot be clicked and don’t highlight in blue, so I can’t delete anything. Why is this?

I believe you are referring to the Latest articles section of the page. This section is always displayed on the bottom of the page (after your content) and cannot be edited with the page builder

I have another question regarding the photos I uploaded.
Checking the speed of my website the program made me aware of a very poor speed. I need to know how big do the photos have to be. I upload one photo and the theme uses this one photo for all the needed placements? Can someone explain this to me one on one? I will pay for this help… Thank you!
PS: I just was able to check all the files that still cause some issues: it is the instagram feed on the bottom of my page. Can I change the image size the WP or Newspaper theme uses to import the images from Instagram? thank you

Unfortunately there are no options to modify the size of the images served by Instagram. You could reduce the number of images displayed, that would have a positive impact if the images are an issue.
