I’ve migrated to a new site with a new site demo template. Everything is excellent. However, I have a mix of old and new/default post templates. What’s the quickest way to reset all post templates to the same post template?

You should assign a cloud template pro for each default template and make it global.
If every post will have a cloud template, then you can switch the global template as you like or assign a different template manually.
You can assign the cloud template pro even in the theme panel settings.
