This usually appears because the server security module blocks the access to admin-ajax.php file. Try to verify the console for error while saving the settings on the Theme Panel, usually it displays a 403 or 404 error.
Contact your server administrator and explain the situation, as it’s requested many times during the a save the file it’s treated as threat so it’s banned. You can report false positives to your server administrator to remove it from the banned list.

The “author under title” option was added to the theme from theme version 4.4 so if you don’t have theme version 4.4 or 4.5 you don’t have it and you need to update the theme.
To edit a theme file you will have to use a source code editor like Notepad++, open the file, make the changes then save it. You can find the files in the theme folder: http://screencast.com/t/zCGRkXr0rOo
For your second issue you will need custom work as the theme doesn’t have an option for that you can try to find a plugin that dose it or get someone to do it for you if you don’t know how to do it yourself because we cannot offer custom work as we work hard on the development, updates, fixes and support. In the last version of Visual Composer the classes have changed and the buttons that we haven styled lost their css, we have this on our todo list and we are working on it unfortunately we still have incompatibility issues regarding VC style.

If you mean that you want to show the mobile menu on tablet screens if the menu doesn’t fit on one line unfortunately that is not possible.
What you can do is to style the menu via css and make the menu font smaller or use smaller names for your menu items.
