The images and logo displayed should be the same for both versions of the theme. I believe nothing has changed in the theme updates to affect the image quality. Try testing with all plugins disabled on both installs, and upload the same photo. Then check for differences.
Also remove any modifications done through the theme files if there are any (like image filters)

Please notice that our theme has a lot of header styles which displays the logo in different sizes. If you want to display a bigger logo, try using the header style 10 which uses the logo in full width. I could give you a code to center the header logo, in Header style 3. Or you could choose another header style that displays the logo centered from default. Like Header style 10 for example

Also worth mentioning is that for Header style 3 there is a limit for the logo size

Please note that each header style requires a specific logo size to be used

This size is calculated to accommodate the logo and the header ad with the best result. If you modify the header logo properties and make it larger like you did, there is no more space for the header ad you are using. It will be displayed on a second row, below the logo.
You can try to stretch the header logo and ad space with this option

If you want to display a bigger logo, you can choose from the header styles that do not require a specific logo size (header styles 9, 10 and 11)

If you need a centered logo, we recommend using one of the centered logo header styles: https://forum.tagdiv.com/header-styles/
Header style 3 has an ad spot besides the logo which does not allow it to go to the center.

There is no theme option to modify the header height. It can only be done with custom modifications. If you want to try, here is a tutorial about how you can use the browser inspector to identify the elements used on a page and their classes, in order to create custom code that you can use in the theme panel
