If you add something like this, you should do it yourself through the code and if you are not aware of the steps which are needed to take in this case, please consider hiring a freelancer/developer to help you because we cannot provide additional customization, sorry! Another alternative for you would be to find such a plugin with this functionality and install it and check it how it works with the theme.

Sorry, but please notice that should be the default theme behavior for that functionality, as you can see here -> https://www.screencast.com/t/mQVeJBc2bTgl If you will choose to Filter your Ajax Categories Dropdown by a Categories, notice that will be displayed some categories and then if you will press the ALL you will see the other ones. Provide your website URL so I can take a closer look at it. Ensure that you are using the latest version of the theme and remove all of the untested plugins if you are using something like this.
