Unfortunately the ajax filter from blocks and flex blocks do not have an option for this, this will display categories until there is no space in block header and only after that the categories will be set in drop down filter, this is the way is suppose to work.

Unfortunately, yes, if the pages were made with other builder is very possible to do not work properly, place make a full backup to your website before you try the update, also if that builder is continue updated you can let the plugin activate with our theme and check to see if this is working properly.
