To increase page speed, I recommend checking which thumbnails you are using on your blocks. You might want to avoid having all of them enabled and optimize and regenerate images. You can use the EWWW Image Optimizer for image optimization and the OMGF plugin for fonts. Additionally, you can use the WP Rocket plugin.

No, you can use classic editor. The only disadvantage is that if you want to use a locker on posts, then they are only available on the Gutenberg editor
