Hello Antoine,
Please notice that all of these category tags are black and blue (theme accent color) set up by default and the theme does not have any such an option that allows you to change their colors, sorry! If you want to change them, you should do it yourself through such custom CSS code and some changes through the code to target the specific categories which are not a simple task and we cannot help you in this case because involves doing such additional customizations and we do not provide custom work services at the moment, sorry! So, if you are not aware of the steps which are needed to take in this case, please consider hiring a freelancer/developer to help you. Usually, we recommend the developers from studio.envato.com.

Hello cccadmin,
The theme cannot provide such data, you could use Google analytics for example
– https://moz.com/blog/absolute-beginners-guide-to-google-analytics
This will provide information about the traffic the website receives. Or try some WordPress website statistics plugins if needed.
If you are using Google Analytics and you have implemented it properly, there would be no problem.
The analytics code can be entered in the theme panel dedicated section. Then you can analyze the collected website data.
Thanks.
