There’s no problem with the license if it will be used only for a project. Normally, the Envato policy allows using a theme only on one install. You can, however, use the theme on a sub-domain if you plan on creating a testing site, but if we are talking about totally different sites with different content, then only one theme per install is legally allowed. I suggest you make a full backup to your database to avoid losing all of your data.

The theme does not control the information displayed by Google in SERP, it depends on Google if stars rating is displayed or not.

When you make major changes in site’s HTML structure, like switching from one theme to another, Google crawler needs some time until will understand the new structure and some information may not be displayed for a while. To minify your js you should use an online tool, like this -> https://www.minifier.org/
