There will be no problem in this case. You can install and activate the theme on a development (staging) environment, then make the website live or what is required. The theme has a activation reset option in the theme system status section as well.
According to Envato license specifications, as long as the theme is used on a single end product there is no problem.

The most recommended method would be by FTP, make a backup just to be safe. Make sure to update the theme plugins as well.

This page builder will be automatically installed and activated when the theme is updated. If your pages contain Visual composer specific elements (not provided by theme) it could create issues. There could be problems if you used Visual composer on posts as well. You could deactivate it temporarily.

I am very sorry but as I mentioned before we did not make any tests with the theme in a multisite environment, so we could not say why this is happening exactly. From what I understand the problem could be related to WordPress, regarding the menus. Maybe a plugin could be interfering, or changes made to WordPress files.

Disabling the date in the theme panel like you mention, will remove the date displayed on posts. If it is still displayed maybe it is a caching issue. Try clearing any installed cache and check the results.

An option to change or replace them with images of your own does not exist, at the moment.
It could be possible to maybe place a background image over the icons you want with a CSS solution, it will take a lot of work however to do it and make sure it looks properly.

That has a simple explanation. When the mobile theme plugin is active, a simpler predefined version of the website will be displayed.
Note that the mobile plugin is optional, if you want the same desktop content to be displayed on mobile deactivate the mobile theme plugin.
There will not be any problems, the main theme is fully responsive and will adapt the website for each device.

The mobile theme does not have such settings. The top grid displayed on mobile will pick and display posts that are included in the Featured category, while the latest articles will display a list of posts sorted by latest.
So the present issue would happen only if you include the latest posts in the Featured category as well.
An option that would allow better control in the mobile homepage may be added in a future theme update, but for the moment this could only be controlled with the Featured category and the posts you assign to it. Sorry for the inconvenience.
