Please notice that you have the possibility to use the header template only at your desired pages do not affect the rest of your pages if you do not want this. You do not need to set up this template to be general.
Regarding the second request, I have checked your website and I saw that it’s an incorrect CSS in the paragraph. Try to use the code below and place it in Theme panel -> Custom CSS area and check the results.

Please notice that you cannot select what categories appear on the mega menu because this behavior is set by default to displays you all the subcategories for this category. If you want to change the structure of the mega menu, you have to change it with hard coding and please notice that is not a simple task. If you are not aware of the steps in this regard, please consider hiring a freelancer/developer to help you because we cannot provide customization services at the moment, sorry!

At the moment, the theme does not have any such an option that allows you to determine what items will look like on desktop vs. mobile, sorry! The default theme behavior, for mobile, is responsive mode. The desktop items will be displayed on mobile devices in responsive mode and the second method for mobile mode is the Mobile Theme which has another layout for mobile. At the moment, these are the only available methods implemented in our theme but in the future, it’s possible to be implemented another feature in this case.
