The theme responsiveness is implemented in the theme, there is no need to make any modifications or activate anything. By default the theme will adapt the website for all devices. This can be seen on the live demo, as you mention.
There is also an optional mobile theme plugin provided. More information about it here

Unfortunately, our theme does not have such an option to minify the style.css file and we cannot recommend any plugins with this functionality because is not tested with our theme. For minifying this file, we are using CloudFlare for our demo and works fine. Hi,

There are no modifications that you can make to display one instance of a block that way. You cannot have two modules on the first row, then three on the rest of the rows.
Please try and find a solution o create the pages using the default implementation of blocks and grids. Take a look at the theme demos and install one of them, or use them for inspiration in design

Please note that blocks display differently, depending on the row layout. For example a block may display three modules on a full row, and two modules in a different row setting. Here you can see how all the blocks look in all layouts

Page speed can be affected by many factors. Having complex Visual composer elements on pages can have a negative impact on page speed. I believe that is the functionality of the post grid that from Visual composer. You could try to reduce the initial number of post loaded in the grid, that should have a positive effect on loading speed of the grid.

Please note that each demo contains custom code and design. The Business demo date is specific to the business demo, there is no date widget that can be placed on pages. It contains a simple text with title followed by a code in a Raw HTML element
